Roasted Broccoli and Bell Pepper Pizza
Kale Salad with Creamy Parmesan Dressing
Ingredients
- 2 cups broccoli florets
- 1 small red bell pepper, thinly sliced
- ½ small onion, thinly sliced
- 1½ Tbsp olive oil
- ¼ tsp kosher salt
- ⅛ tsp pepper
- ½ cup marinara sauce
- 1½ cups freshly shredded mozzarella cheese, divided
- 1 frozen cauliflower pizza crust (or use regular pizza crusts)
- ½ cup freshly shredded Parmesan cheese
Instructions
- Preheat oven to 450°F. Toss together broccoli, bell pepper, onion, oil, salt, and pepper over a rimmed baking sheet; spread in a single layer. Bake 10 to 15 minutes or until tender, stirring once.
- Spread marinara over pizza crust and sprinkle with mozzarella; top with roasted vegetable mixture and Parmesan.
- Bake 12 to 15 minutes or until thoroughly heated (see Note).

- ¼ cup extra virgin olive oil
- 2 Tbsp plain Greek yogurt
- ½ Tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- ¼ tsp pepper
- 1 (5-oz) pkg baby kale
- ¼ cup freshly shredded Parmesan cheese
Side Dish Instructions
- Whisk together oil, yogurt, lemon juice, garlic, mustard, and pepper in a large bowl. Add kale and cheese; toss.
