Roasted Broccoli and Bell Pepper Pizza

Ingredients

  • 2 cups broccoli florets
  • 1 small red bell pepper, thinly sliced
  • ½ small onion, thinly sliced
  • 1½ Tbsp olive oil
  • ¼ tsp kosher salt
  • ⅛ tsp pepper
  • ½ cup marinara sauce
  • 1½ cups freshly shredded mozzarella cheese, divided
  • 1 frozen cauliflower pizza crust (or use regular pizza crusts)
  • ½ cup freshly shredded Parmesan cheese

Instructions

  1. Preheat oven to 450°F. Toss together broccoli, bell pepper, onion, oil, salt, and pepper over a rimmed baking sheet; spread in a single layer. Bake 10 to 15 minutes or until tender, stirring once.
  2. Spread marinara over pizza crust and sprinkle with mozzarella; top with roasted vegetable mixture and Parmesan.
  3. Bake 12 to 15 minutes or until thoroughly heated (see Note).

  • ¼ cup extra virgin olive oil
  • 2 Tbsp plain Greek yogurt
  • ½ Tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • ¼ tsp pepper
  • 1 (5-oz) pkg baby kale
  • ¼ cup freshly shredded Parmesan cheese

Side Dish Instructions

  1. Whisk together oil, yogurt, lemon juice, garlic, mustard, and pepper in a large bowl. Add kale and cheese; toss.
