Ranch Mashed Potatoes
Ingredients
- 1 (5-lb) pkg red potatoes, cut into 1-inch pieces
- 1 (8-oz) block cream cheese, softened
- ¼ cup butter, softened
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 (8-oz) carton sour cream
- 1 (1-oz) envelope dry ranch dressing mix
Instructions
- Combine potatoes and water to cover in a large pot; bring to a boil over medium-high heat. Reduce heat, and simmer 15 minutes or until potatoes are very tender.
- Drain and return to pan. Add cream cheese and butter; mash with a potato masher to desired consistency.
- Stir in cheese, sour cream, and ranch dressing mix.
- Cook, stirring constantly, over low heat until potatoes are thoroughly heated.
