Ground Turkey Pasta Casserole

Ingredients

  • 8 oz penne pasta
  • 1 Tbsp olive oil
  • 12 oz sliced mushrooms
  • 2 zucchini, chopped
  • 1 lb ground turkey
  • 1 (24-oz) jar spaghetti sauce
  • 1 Tbsp sugar
  • 1½ tsp garlic salt
  • 1½ cups cottage cheese
  • ½ cup chopped fresh basil
  • ½ cup shredded Parmesan cheese
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions; drain.
  2. Meanwhile, heat oil in large nonstick skillet over medium-high heat. Add mushrooms to skillet; cook 4 minutes. Add zucchini; cook 7 minutes; and set mushroom mixture aside on a plate.
  3. Add turkey to skillet; cook until browned and crumbly. Add spaghetti sauce, sugar, and garlic salt; cook 5 minutes.
  4. Combine cottage cheese, basil, and Parmesan cheese in a small bowl.
  5. Spoon half of pasta in a greased 13-x 9-inch pan; top with ⅓ cup spaghetti sauce, half of zucchini mixture, half of cottage cheese mixture and one-third of mozzarella cheese; repeat layers.
  6. Top with remaining spaghetti sauce and mozzarella cheese; cover and bake 45 minutes or until bubbly.

  • 1 (20-count) pkg frozen biscuits
  • Honey

Side Dish Instructions

  1. Bake desired number of biscuits according to package directions. Drizzle with honey.
