Apple and Cheddar Grilled Cheese

Ingredients

  • 1½ Tbsp Dijon mustard (or use yellow mustard)
  • 3 Tbsp mayonnaise
  • 12 (1-oz) slices Italian bread (or use sandwich bread)
  • 2 cups shredded Cheddar cheese
  • 1 large apple, peeled, cored and thinly sliced
  • 2 Tbsp butter

Instructions

  1. Combine mustard and mayonnaise in a bowl; spread onto bread slices.
  2. Sprinkle cheese over mayo on 6 bread slices; arrange apple slices on cheese; top with remaining 6 bread slices.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat. Place 3 sandwiches in skillet; cook 2 to 3 minutes per side or until golden brown and cheese melts.
  4. Repeat procedure with 1 Tbsp butter and 3 sandwiches. Cut sandwiches in half.

  • 2 (20-oz) pkg frozen sweet potato fries with sea salt
  • Ketchup

Side Dish Instructions

  1. Bake fries according to package directions. Serve with ketchup.
