Skillet Sausage and Apples

Ingredients

  • 6 (3-oz) chicken and apple smoked chicken sausages
  • 4 organic Granny Smith apples, peeled and cut into wedges
  • 2 Tbsp olive oil
  • 1 tsp dried thyme
  • ½ cup low-sodium chicken broth
  • 3 Tbsp pure maple syrup

Instructions

  1. Sauté sausage and apples in hot oil in a large nonstick skillet over medium heat 8 minutes or until browned; add thyme, broth, and maple syrup.
  2. Cook 5 minutes or until apples are tender and sauce is reduced by half.

Side Dish Ingredients

  • 1 onion, sliced
  • 3 Tbsp olive oil
  • 1 (2½ lb) head red cabbage, cored, halved and sliced
  • ¼ tsp salt
  • ½ tsp pepper
  • ½ tsp caraway seeds
  • 1½ cups low-sodium chicken broth
  • 3 Tbsp balsamic vinegar

Side Dish Instructions

  1. Sauté onion in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add cabbage, salt, pepper, and caraway seeds.
  2. Cook 5 minutes or until cabbage begins to wilt; add broth and vinegar.
  3. Cover, reduce heat, and simmer 25 minutes or until cabbage is tender.
