Maple-Pecan Salmon

Ingredients
- 3 Tbsp butter
- ½ cup finely chopped pecans
- ⅓ cup maple syrup
- 1 tsp Worcestershire sauce
- ½ tsp salt
- ½ tsp pepper
- 6 (6-oz) salmon fillets
Instructions
- Preheat oven to 425°F. Melt butter in a saucepan. Stir in nuts, syrup, Worcestershire, salt, and pepper. Cook 2 to 3 minutes or until slightly thickened.
- Place fish on a large rimmed baking sheet coated with cooking spray. Spread nut mixture over fish. Bake 15 minutes or until fish flakes with a fork.

- 1½ lb red potatoes, halved
- 3 carrots, cut into chunks
- 3 Tbsp olive oil
- 2 tsp dried crushed rosemary
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet.
- Bake 20 minutes or until browned and tender, stirring after 10 minutes.
