Almond Butter Chicken

Ingredients
- ½ cup creamy almond butter or peanut butter
- 3 Tbsp low-sodium soy sauce
- 3 Tbsp lemon juice
- 2 Tbsp water
- 1½ Tbsp maple syrup
- 1 Tbsp sesame oil
- 2 tsp ground ginger
- ½ tsp salt, divided
- 3 cloves garlic, minced
- 6 (6-oz) boneless, skinless chicken breasts
Instructions
- Combine almond butter, soy sauce, lemon juice, water, syrup, oil, ginger, ¼ tsp salt, and garlic.
- Sprinkle chicken with ¼ tsp salt. Cook in a large skillet coated with cooking spray over medium-high heat 4 minutes per side or until browned.
- Add almond butter mixture to skillet, turning to coat chicken. Cook 2 to 3 minutes or until thoroughly heated and chicken is done.
Side Dish Ingredients
- 2 (3.5-oz) pkg boil-in-bag jasmine rice
- 3 Tbsp sesame oil, divided
- 3 green onions, thinly sliced
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 (16-oz) pkg trimmed green beans
Side Dish Instructions
- Cook rice according to package directions. Stir in 2 Tbsp oil, onions, and ¼ tsp each salt and pepper.
- Meanwhile, cook beans according to package directions. Stir in 1 Tbsp oil and ¼ tsp each salt and pepper.
