Chorizo-Tomato Spaghetti

Ingredients

  • 10 oz whole wheat spaghetti
  • 1 (13.5-oz) pkg frozen veggie chorizo crumbles
  • ⅓ cup water
  • 2 pints grape tomatoes
  • 2 cloves garlic, minced
  • ½ cup white wine
  • 2 cups natural marinara sauce
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook crumbles and ⅓ cup water, covered, in a large skillet over medium-high heat 4 minutes. Reduce heat to medium; stir in tomatoes, garlic, and wine. Cook 4 to 5 minutes or until tomatoes begin to burst.
  3. Add sauce to skillet; cook 2 to 3 minutes or until thoroughly heated. Serve sauce over pasta; sprinkle with cheese and basil.
