Chorizo-Tomato Spaghetti
Ingredients
- 10 oz whole wheat spaghetti
- 1 (13.5-oz) pkg frozen veggie chorizo crumbles
- ⅓ cup water
- 2 pints grape tomatoes
- 2 cloves garlic, minced
- ½ cup white wine
- 2 cups natural marinara sauce
- ½ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh basil
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook crumbles and ⅓ cup water, covered, in a large skillet over medium-high heat 4 minutes. Reduce heat to medium; stir in tomatoes, garlic, and wine. Cook 4 to 5 minutes or until tomatoes begin to burst.
- Add sauce to skillet; cook 2 to 3 minutes or until thoroughly heated. Serve sauce over pasta; sprinkle with cheese and basil.
