Cheese-Topped Salmon
Roasted BroccoliniIngredients
- 4 (5-oz) frozen salmon fillets, thawed
- 3 Tbsp lemon juice, divided
- ½ tsp salt, divided
- ½ cup freshly grated Parmesan cheese
- 2 Tbsp butter, melted
- 3 Tbsp olive-oil mayonnaise
- 2 green onions, chopped
Instructions
- Preheat oven to 350°F. Coat a 13- x 9-inch baking dish with cooking spray. Place fillets in dish. Brush with 1 Tbsp lemon juice, and sprinkle with ¼ tsp salt.
- Bake 30 to 40 minutes or until fish flakes with a fork.
- Meanwhile, combine 2 Tbsp lemon juice, Parmesan cheese, melted butter, mayonnaise, onions, and ¼ tsp salt.
- Remove fish from oven, and top with cheese mixture. Increase oven temperature to broil.
- Broil fish 2 minutes or just until cheese mixture is golden brown.
Side Dish Ingredients
- 1¼ lb Broccolini (about 2 bunches)
- 2 Tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- 2 cloves garlic, minced
Side Dish Instructions
- Preheat oven to 400°F. Toss together Broccolini, oil, salt, pepper, and garlic on a rimmed baking sheet.
- Bake 10 minutes or until Broccolini begins to brown, stirring once.
