Onion Pot Roast
Lemon-Butter Green Beans with AlmondsIngredients
- 2 lb boneless chuck roast
- 2 Tbsp Dijon mustard
- 2½ Tbsp dry onion soup mix
- 1 onion, sliced
- 4 slices bacon, coarsely chopped
- ½ cup low-sodium beef broth
Instructions
- Preheat oven to 325°F. Line a 13- x 9-inch pan with foil.
- Place roast in pan; rub roast with mustard and onion soup mix. Sprinkle onion rings and bacon over roast.
- Pour broth around roast. Cover tightly with foil; roast 3 to 4 hours or until tender.
- Uncover and roast 30 minutes to 1 hour longer or until onions are browned.
Side Dish Ingredients
- 1 (18-oz) pkg frozen whole green beans
- ⅓ cup slivered almonds
- 3 Tbsp butter
- 1 Tbsp lemon juice
- ½ tsp salt
Side Dish Instructions
- Cook green beans according to package directions; place in a bowl.
- Cook nuts in butter in a small skillet over medium heat until toasted. Stir in lemon juice; spoon over green beans. Sprinkle with salt.
