Lemon-Butter Green Beans with Almonds

Ingredients

  • 2 lb boneless chuck roast
  • 2 Tbsp Dijon mustard
  • 2½ Tbsp dry onion soup mix
  • 1 onion, sliced
  • 4 slices bacon, coarsely chopped
  • ½ cup low-sodium beef broth

Instructions

  1. Preheat oven to 325°F. Line a 13- x 9-inch pan with foil.
  2. Place roast in pan; rub roast with mustard and onion soup mix. Sprinkle onion rings and bacon over roast.
  3. Pour broth around roast. Cover tightly with foil; roast 3 to 4 hours or until tender.
  4. Uncover and roast 30 minutes to 1 hour longer or until onions are browned.

  • 1 (18-oz) pkg frozen whole green beans
  • ⅓ cup slivered almonds
  • 3 Tbsp butter
  • 1 Tbsp lemon juice
  • ½ tsp salt

Side Dish Instructions

  1. Cook green beans according to package directions; place in a bowl.
  2. Cook nuts in butter in a small skillet over medium heat until toasted. Stir in lemon juice; spoon over green beans. Sprinkle with salt.
