Grilled Tomato Soup

Grilled Cheese-Apple Sandwiches

Ingredients

  • 2 tomatoes, halved
  • 1 Tbsp olive oil
  • ½ tsp pepper, divided
  • ¼ tsp salt, divided
  • 1 (7-oz) jar roasted red peppers, drained
  • 1 Tbsp balsamic vinegar
  • ½ Tbsp honey
  • 1 tsp dried basil (or use 2 Tbsp chopped fresh basil)
  • 1 clove garlic

Instructions

  1. Preheat grill to medium-high heat. Drizzle tomatoes with oil; sprinkle with ¼ tsp pepper and ⅛ tsp salt.
  2. Grill, covered, 5 to 7 minutes or until skin is blistered.
  3. Process tomatoes, red peppers, vinegar, honey, basil, and garlic in a food processor until smooth.
  4. Transfer to a saucepan, and cook just until thoroughly heated. Season with ¼ tsp pepper and ⅛ tsp salt.

Side Dish Ingredients

  • 1 Tbsp butter, softened
  • 4 slices whole-grain sandwich bread
  • 2 oz white Cheddar cheese, cut into thin slices
  • ½ small Granny Smith apple, thinly sliced

Side Dish Instructions

  1. Spread butter on one side of each bread slice. Top 2 non-buttered sides with cheese and apple slices; top with 2 bread slices, buttered sides up.
  2. Cook sandwiches in a large nonstick skillet over medium heat 2 to 3 minutes per side or until golden and cheese is melted.
