Grilled Tomato Soup
Grilled Cheese-Apple SandwichesIngredients
- 2 tomatoes, halved
- 1 Tbsp olive oil
- ½ tsp pepper, divided
- ¼ tsp salt, divided
- 1 (7-oz) jar roasted red peppers, drained
- 1 Tbsp balsamic vinegar
- ½ Tbsp honey
- 1 tsp dried basil (or use 2 Tbsp chopped fresh basil)
- 1 clove garlic
Instructions
- Preheat grill to medium-high heat. Drizzle tomatoes with oil; sprinkle with ¼ tsp pepper and ⅛ tsp salt.
- Grill, covered, 5 to 7 minutes or until skin is blistered.
- Process tomatoes, red peppers, vinegar, honey, basil, and garlic in a food processor until smooth.
- Transfer to a saucepan, and cook just until thoroughly heated. Season with ¼ tsp pepper and ⅛ tsp salt.
Side Dish Ingredients
- 1 Tbsp butter, softened
- 4 slices whole-grain sandwich bread
- 2 oz white Cheddar cheese, cut into thin slices
- ½ small Granny Smith apple, thinly sliced
Side Dish Instructions
- Spread butter on one side of each bread slice. Top 2 non-buttered sides with cheese and apple slices; top with 2 bread slices, buttered sides up.
- Cook sandwiches in a large nonstick skillet over medium heat 2 to 3 minutes per side or until golden and cheese is melted.
