Fried Chicken Salad

Ingredients

  • 1 (25-oz) pkg frozen fully cooked chicken tenderloins
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 1 (10-oz) pkg shredded carrots
  • 1 pint grape tomatoes, halved
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 cup chopped pecans
  • 1 cup mayonnaise
  • ½ cup whole buttermilk
  • 2 hard-cooked egg yolks
  • 1 Tbsp minced fresh tarragon
  • 1 Tbsp Dijon mustard
  • 1 tsp fresh lemon juice

Instructions

  1. Fry or bake chicken according to package directions; cut into bite-size pieces.
  2. Toss together lettuce, carrots, tomatoes, cheese, and nuts in a large bowl.
  3. Meanwhile, process mayonnaise, buttermilk, egg yolks, tarragon, mustard, and lemon juice in a blender until smooth. Season with salt and pepper to taste.
  4. Drizzle desired amount of dressing on salad; toss. Divide salad among 6 plates, and top with chicken.
