Fried Chicken Salad
Ingredients
- 1 (25-oz) pkg frozen fully cooked chicken tenderloins
- 1 (3-count) pkg romaine lettuce hearts, chopped
- 1 (10-oz) pkg shredded carrots
- 1 pint grape tomatoes, halved
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 cup chopped pecans
- 1 cup mayonnaise
- ½ cup whole buttermilk
- 2 hard-cooked egg yolks
- 1 Tbsp minced fresh tarragon
- 1 Tbsp Dijon mustard
- 1 tsp fresh lemon juice
Instructions
- Fry or bake chicken according to package directions; cut into bite-size pieces.
- Toss together lettuce, carrots, tomatoes, cheese, and nuts in a large bowl.
- Meanwhile, process mayonnaise, buttermilk, egg yolks, tarragon, mustard, and lemon juice in a blender until smooth. Season with salt and pepper to taste.
- Drizzle desired amount of dressing on salad; toss. Divide salad among 6 plates, and top with chicken.
