Pork and Green Bean Stir-Fry
Ingredients
- ¾ lb pork tenderloin, cut into ½-inch pieces
- 1 Tbsp vegetable oil, divided
- ½ (8-oz) pkg French green beans, halved
- ½ cup thinly sliced onion
- ½ cup thinly sliced red bell pepper
- ½ (8-oz) can sliced water chestnuts, drained
- 1 cup low-sodium chicken broth
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp cornstarch
- ¼ tsp crushed red pepper
Instructions
- Brown pork in ½ Tbsp hot oil in a large skillet over medium-high heat; remove from skillet and set aside.
- Heat ½ Tbsp oil in skillet over medium-high heat; add beans, onion, and bell pepper.
- Cook 6 minutes, stirring constantly; add water chestnuts.
- Whisk together broth, soy sauce, cornstarch, and red pepper.
- Add to skillet along with pork. Bring to a boil, reduce heat, and simmer until sauce is thickened.
