Pumpkin-Sage Pasta
Ingredients
- 4 oz penne pasta
- ½ cup chopped onion
- 2 tsp olive oil
- ½ cup pumpkin puree
- ½ cup freshly grated Parmesan cheese (or use shaved)
- ¼ cup heavy cream
- ¼ tsp dried sage
- ¼ tsp salt
- 2 cups baby spinach
Instructions
- Cook pasta according to package directions, reserving ¾ cup pasta water. Drain.
- Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 3 to 5 minutes or until lightly browned.
- Stir in pumpkin, cheese, cream, sage, and salt; cook 4 to 5 minutes or to desired thickness, adding reserved pasta water as needed.
- Add pasta and spinach; cook 2 to 3 minutes or until spinach wilts.
