Pumpkin-Sage Pasta

Ingredients

  • 4 oz penne pasta
  • ½ cup chopped onion
  • 2 tsp olive oil
  • ½ cup pumpkin puree
  • ½ cup freshly grated Parmesan cheese (or use shaved)
  • ¼ cup heavy cream
  • ¼ tsp dried sage
  • ¼ tsp salt
  • 2 cups baby spinach

Instructions

  1. Cook pasta according to package directions, reserving ¾ cup pasta water. Drain.
  2. Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 3 to 5 minutes or until lightly browned.
  3. Stir in pumpkin, cheese, cream, sage, and salt; cook 4 to 5 minutes or to desired thickness, adding reserved pasta water as needed.
  4. Add pasta and spinach; cook 2 to 3 minutes or until spinach wilts.
