Ham and Squash Skillet Casserole
Honey-Drizzled Sweet PotatoesIngredients
- ½ cup panko breadcrumbs
- 1 tsp canola oil
- 4 oz sliced low-sodium deli ham, chopped
- 2 yellow squash, sliced
- ½ cup chopped green bell pepper
- ¼ tsp dried oregano, crumbled
- ½ cup shredded reduced-fat sharp Cheddar cheese
Instructions
- Heat a medium nonstick skillet medium-high heat; add breadcrumbs, and cook 2 minutes or until golden, stirring constantly. Set aside.
- Heat oil in skillet. Add ham, and cook 1 minute until lightly browned; stir in squash, bell pepper, and oregano; cook 6 to 7 minutes or until vegetables are tender, stirring often.
- Remove from heat, sprinkle with cheese and breadcrumbs.
Side Dish Ingredients
- 1 (12-oz) sweet potato
- 1 tsp honey
Side Dish Instructions
- Pierce potato several times with a fork; wrap in a damp paper towel.
- Microwave at HIGH 8 to 10 minutes or until tender when pierced with a fork.
- Cut potato in half lengthwise; drizzle with honey.
