Ham and Squash Skillet Casserole

Ingredients

  • ½ cup panko breadcrumbs
  • 1 tsp canola oil
  • 4 oz sliced low-sodium deli ham, chopped
  • 2 yellow squash, sliced
  • ½ cup chopped green bell pepper
  • ¼ tsp dried oregano, crumbled
  • ½ cup shredded reduced-fat sharp Cheddar cheese

Instructions

  1. Heat a medium nonstick skillet medium-high heat; add breadcrumbs, and cook 2 minutes or until golden, stirring constantly. Set aside.
  2. Heat oil in skillet. Add ham, and cook 1 minute until lightly browned; stir in squash, bell pepper, and oregano; cook 6 to 7 minutes or until vegetables are tender, stirring often.
  3. Remove from heat, sprinkle with cheese and breadcrumbs.

Side Dish Ingredients

  • 1 (12-oz) sweet potato
  • 1 tsp honey

Side Dish Instructions

  1. Pierce potato several times with a fork; wrap in a damp paper towel.
  2. Microwave at HIGH 8 to 10 minutes or until tender when pierced with a fork.
  3. Cut potato in half lengthwise; drizzle with honey.
