Apple-Sage Pork Chops
Roasted Butternut SquashIngredients
- 2 (8-oz) bone-in pork chops
- ¼ tsp salt
- ¼ tsp pepper
- 2 tsp butter, divided
- 1 Honeycrisp apple, sliced (or use 1 Fuji apple)
- ¼ cup sliced onion
- 2 tsp minced garlic
- 3 Tbsp low-sodium chicken broth
- 3 Tbsp white wine
- 2 tsp chopped fresh sage
Instructions
- Sprinkle pork with salt and pepper. Melt 1 tsp butter in a large nonstick skillet over medium-high heat; add pork, and cook 3 minutes per side or until browned. Remove from skillet, and keep warm.
- Melt 1 tsp butter in skillet; add apple, onion, and garlic. Cook 3 minutes or until crisp-tender. Add broth, wine, and sage, scraping skillet to loosen browned bits; return pork to skillet. Cook 3 to 4 minutes or until thickened.
Side Dish Ingredients
- 2 cups peeled, cubed butternut squash
- 1 Tbsp olive oil
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a foil-lined baking sheet. Bake 25 minutes or until tender, stirring once.
