Ingredients

  • 1½ lb ground beef
  • ¼ cup chipotle peppers in adobo sauce, finely chopped (see Note)
  • 2 tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup mayonnaise 
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice
  • 6 red cabbage leaves
  • 1 avocado, sliced
  • 1 tomato, sliced

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Combine beef, chipotle peppers, garlic powder, salt, and pepper; shape into 6 patties.
  3. Grill patties, covered, 6 minutes per side or until centers are no longer pink.
  4. Meanwhile, stir together mayonnaise, cilantro, and lime juice in a small bowl.
  5. Serve burgers in cabbage leaves with mayonnaise mixture, avocado, and tomato.

Side Dish Ingredients

  • 1 large jicama
  • 2 cups water
  • 2 Tbsp olive oil
  • 1 tsp smoked paprika (or use regular) 
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Peel jicama; cut in half. Cut each half into ½-inch thick slices; cut slices into ¼-inch sticks.
  2. Combine jicama and water in a large microwave-safe bowl. Cover, and microwave at HIGH power 5 to 6 minutes or just until tender. Drain; pat dry with paper towels.
  3. Toss together jicama, oil, paprika, garlic powder, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
  4. Bake 20 to 25 minutes or until golden, turning once.
