Ingredients

  • 2 (12-oz) cans albacore tuna in water, drained
  • ¾ cup Italian breadcrumbs
  • 2 large eggs, lightly beaten
  • 1 Tbsp lemon juice
  • 1 Tbsp mayonnaise
  • 2 tsp dried dill
  • ½ tsp salt
  • 3 Tbsp olive oil
  • Lemon wedges (optional)

Instructions

  1. Combine tuna, breadcrumbs, eggs, lemon juice, mayonnaise, dill, and salt in a bowl; shape into 12 (1-inch-thick) patties.
  2. Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until browned.
  3. Serve with lemon wedges, if desired.

  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 (14.5-oz) can diced tomatoes
  • 2 (5-oz) pkg baby spinach
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Sauté garlic in hot oil in a saucepan over medium heat 1 minute; add beans and tomatoes.
  2. Bring to a boil; add spinach, in batches. Cook 3 minutes or until spinach is wilted; stir in basil.
