Lemon-and-Garlic Baked Tilapia
Orzo Pasta Salad
Ingredients
- 2 Tbsp butter, softened
- 2 cloves garlic, minced
- ½ tsp lemon zest
- ½ Tbsp lemon juice
- ⅛ tsp crushed red pepper
- 2 tilapia fillets
Instructions
- Preheat oven to 400°F. Stir together butter, garlic, lemon zest, lemon juice, and red pepper.
- Place fish on a foil-lined rimmed baking sheet; season lightly with salt and pepper. Spread butter mixture over fish. Bake 10 to 15 minutes or until fish flakes with a fork.
Side Dish Ingredients
- ½ (12-oz) pkg gluten-free orzo (such as Delallo)
- 1 zucchini, thinly sliced
- 2 Tbsp red wine vinegar
- 1 Tbsp lemon juice
- ½ tsp honey
- ¼ cup olive oil
- 1 cup grape tomatoes, halved
- 2 Tbsp chopped fresh basil
Side Dish Instructions
- Cook pasta according to package directions, adding zucchini during last 2 minutes of cooking; drain and rinse with cold water.
- Meanwhile, whisk together vinegar, lemon juice, and honey in a large bowl. Add oil, whisking until blended. Stir in pasta mixture, tomatoes, and basil.
