Pork Fajita Lettuce Cups
Creamy Lemon Cauli-Rice
Ingredients
- 1½ Tbsp low-sugar apricot preserves
- 1 Tbsp lime juice
- ¾ tsp chopped chipotle chiles in adobo sauce
- 1 red bell pepper, sliced
- ½ small red onion, sliced
- 2 Tbsp olive oil, divided
- ¼ tsp kosher salt, divided
- ¼ tsp black pepper, divided
- 2 small cloves garlic, finely chopped
- ½ lb pork tenderloin, thinly sliced
- ½ head Bibb lettuce, leaves separated
- ¼ cup crumbled queso fresco cheese
- Lime wedges (optional)
Instructions
- Combine preserves, lime juice, and chipotle chiles.
- Cook bell pepper and onion in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until tender. Season with ⅛ tsp each salt and pepper.
- Add garlic; cook 1 minute. Place bell pepper mixture in a large bowl.
- Season pork with ⅛ tsp each salt and pepper. Add 1 Tbsp oil to same skillet. Cook pork 3 to 4 minutes per side or until browned on each side. Add preserves mixture to skillet; cook 1 minute.
- Return bell pepper mixture to skillet; toss. Serve in lettuce leaves topped with cheese. Serve with lime wedges, if desired.

- 1 lemon
- 1 clove garlic, minced
- 1 small shallot, minced
- 1½ tsp olive oil
- 1 (12-oz) pkg cauliflower crumbles
- ⅓ cup low-sodium chicken broth
- 3 Tbsp heavy cream
- 1 Tbsp butter
- 1 Tbsp chopped fresh cilantro
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Grate zest and squeeze juice from lemon; set aside.
- Cook garlic and shallot in hot oil in a large saucepan oven medium-high heat 1 to 2 minutes or until lightly browned.
- Stir in cauliflower; cook 3 to 4 minutes, stirring occasionally. Stir in broth; reduce heat, and cook 5 minutes or until cauliflower is tender.
- Stir in lemon zest, lemon juice, cream, and butter; cook 7 to 8 minutes or until thick and creamy.
- Stir in cilantro, salt, and pepper.
