Apple Upside-Down Cake

Ingredients
- ½ cup plus ⅓ cup butter, softened and divided
- 1¾ cups packed brown sugar, divided
- ¾ tsp ground cinnamon, divided
- 1 large tart, crisp apple, peeled and thinly sliced
- 1 large egg
- 1⅓ cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- ⅓ cup milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Melt ⅓ cup butter in a 9-inch round pan; stir in ¾ cup sugar and ¼ tsp cinnamon. Arrange apple over sugar mixture.
- Beat ½ cup softened butter and 1 cup sugar in a large bowl at medium speed with an electric mixer until fluffy. Beat in egg.
- Whisk together flour, baking powder, ½ tsp cinnamon, and salt in a small bowl. Gradually add to butter mixture alternately with milk, beginning and ending with flour mixture, beating just until blended after each addition.
- Beat in vanilla. Spoon batter over apple in pan. Bake 35 to 45 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 10 minutes. Invert cake onto a platter; serve warm.
