Apple Upside-Down Cake

Ingredients

  • ½ cup plus ⅓ cup butter, softened and divided
  • 1¾ cups packed brown sugar, divided
  • ¾ tsp ground cinnamon, divided
  • 1 large tart, crisp apple, peeled and thinly sliced
  • 1 large egg
  • 1⅓ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ⅓ cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Melt ⅓ cup butter in a 9-inch round pan; stir in ¾ cup sugar and ¼ tsp cinnamon. Arrange apple over sugar mixture.
  2. Beat ½ cup softened butter and 1 cup sugar in a large bowl at medium speed with an electric mixer until fluffy. Beat in egg.
  3. Whisk together flour, baking powder, ½ tsp cinnamon, and salt in a small bowl. Gradually add to butter mixture alternately with milk, beginning and ending with flour mixture, beating just until blended after each addition.
  4. Beat in vanilla. Spoon batter over apple in pan. Bake 35 to 45 minutes or until a wooden pick inserted in center comes out clean.
  5. Cool in pan 10 minutes. Invert cake onto a platter; serve warm.
