Chicken Paprikash

Whole-Grain Egg Noodles and Steamed Green Beans

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 Tbsp paprika, divided
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 (14.5-oz) can BPA-free organic diced tomatoes
  • ½ cup water
  • 1 (8-oz) carton sour cream
  • ¼ cup chopped fresh parsley

Instructions

  1. Cut chicken into 1-inch cubes; sprinkle with 1 Tbsp paprika, salt, and pepper.
  2. Cook chicken in hot oil in a large skillet over medium heat 3 to 5 minutes, stirring occasionally, until done. Remove from skillet; set aside.
  3. Add onion to skillet; cook 5 minutes or until tender.
  4. Return chicken and juices to skillet. Add tomatoes, 1 Tbsp paprika and water. Bring to a boil over medium heat; reduce heat, and simmer 4 minutes.
  5. Stir in sour cream; sprinkle with parsley. Serve over hot cooked egg noodles.

  • 2 (12-oz) pkg trimmed green beans
  • ½ tsp salt
  • ½ tsp pepper

  1. Cook noodles according to package directions; toss with 2 Tbsp butter.
  2. Meanwhile, cook green beans according to package directions; toss with 2 Tbsp butter, salt, and pepper.
