Chicken Paprikash
Whole-Grain Egg Noodles and Steamed Green Beans
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 Tbsp paprika, divided
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 onion, chopped
- 1 (14.5-oz) can BPA-free organic diced tomatoes
- ½ cup water
- 1 (8-oz) carton sour cream
- ¼ cup chopped fresh parsley
Instructions
- Cut chicken into 1-inch cubes; sprinkle with 1 Tbsp paprika, salt, and pepper.
- Cook chicken in hot oil in a large skillet over medium heat 3 to 5 minutes, stirring occasionally, until done. Remove from skillet; set aside.
- Add onion to skillet; cook 5 minutes or until tender.
- Return chicken and juices to skillet. Add tomatoes, 1 Tbsp paprika and water. Bring to a boil over medium heat; reduce heat, and simmer 4 minutes.
- Stir in sour cream; sprinkle with parsley. Serve over hot cooked egg noodles.

- 2 (12-oz) pkg trimmed green beans
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook noodles according to package directions; toss with 2 Tbsp butter.
- Meanwhile, cook green beans according to package directions; toss with 2 Tbsp butter, salt, and pepper.
