Beef Burrito Bowls

Ingredients

  • ½ cup long-grain white rice
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • ¾ lb ground beef
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 (15.5-oz) can black beans, drained and rinsed
  • 1 cup shredded Monterey Jack cheese
  • ½ (8-oz) pkg shredded lettuce
  • 1 tomato, chopped
  • ½ (12-oz) pkg tortilla chips

Instructions

  1. Cook rice according to package directions; stir in cilantro and lime juice. Set aside.
  2. Cook beef in a nonstick skillet over medium-high heat until browned and crumbly; drain and return to skillet. Stir in cumin and chili powder; season lightly with salt and pepper.
  3. Heat beans according to package directions. Divide rice between 2 shallow bowls. Top with beef mixture, beans, cheese, lettuce, and tomato. Serve with tortilla chips.
