Mixed Green Salad

Ingredients

  • ½ cup minced onion
  • 2 cloves garlic, minced
  • ⅛ tsp crushed red pepper
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can peeled tomatoes, finely chopped
  • ¼ tsp salt
  • ½ tsp dried basil
  • ½ (16-oz) pkg spaghetti
  • 3 Tbsp shredded Parmesan cheese
  • 2 Tbsp butter

Instructions

  1. Cook onion, garlic, and crushed red pepper in hot oil in a large skillet over medium-high heat until onion is tender. Stir in tomatoes, salt, and basil.
  2. Cook, stirring occasionally, 10 minutes or until slightly thickened.
  3. Meanwhile, cook pasta according to package directions, cooking 2 minutes less than package directs; drain, reserving ½ cup pasta water.
  4. Bring pasta water to a boil in pasta pot over medium-high heat. Stir in pasta, and cook until liquid is absorbed. Add cheese and butter, stirring until melted.
  5. Divide pasta between 2 shallow bowls. Top with tomato mixture.

  • ½ (12-oz) pkg classic salad mix
  • 1 cup grape tomatoes
  • ¼ cup Ranch dressing

Side Dish Instructions

  1. Toss salad mix with tomatoes and dressing just before serving.
