Pasta Pomodoro
Mixed Green SaladIngredients
- ½ cup minced onion
- 2 cloves garlic, minced
- ⅛ tsp crushed red pepper
- 2 Tbsp olive oil
- 1 (14.5-oz) can peeled tomatoes, finely chopped
- ¼ tsp salt
- ½ tsp dried basil
- ½ (16-oz) pkg spaghetti
- 3 Tbsp shredded Parmesan cheese
- 2 Tbsp butter
Instructions
- Cook onion, garlic, and crushed red pepper in hot oil in a large skillet over medium-high heat until onion is tender. Stir in tomatoes, salt, and basil.
- Cook, stirring occasionally, 10 minutes or until slightly thickened.
- Meanwhile, cook pasta according to package directions, cooking 2 minutes less than package directs; drain, reserving ½ cup pasta water.
- Bring pasta water to a boil in pasta pot over medium-high heat. Stir in pasta, and cook until liquid is absorbed. Add cheese and butter, stirring until melted.
- Divide pasta between 2 shallow bowls. Top with tomato mixture.

- 1 cup grape tomatoes
- ¼ cup Ranch dressing

- Toss salad mix with tomatoes and dressing just before serving.
