Chicken Farro Bowls

Ingredients
- ⅓ cup pearled farro (see Note)
- ½ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ cup shredded carrots
- ¾ cup canned chickpeas, rinsed
- 3 Tbsp golden raisins
- 3 Tbsp pistachios
- 2 green onions, sliced
- ¼ cup refrigerated lemon vinaigrette (such as Marzetti)
- 2 Tbsp chopped fresh flat-leaf parsley (optional)
Instructions
- Cook farro according to package directions.
- Meanwhile, sprinkle chicken with salt and pepper. Cook chicken in a large skillet coated with cooking spray 6 to 8 minutes or until done.
- Combine farro, chicken, carrots, chickpeas, raisins, nuts, and onions in a large bowl. Toss with vinaigrette. Sprinkle with parsley, if desired.
