Chicken Farro Bowls

Ingredients

  • ⅓ cup pearled farro (see Note)
  • ½ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ cup shredded carrots
  • ¾ cup canned chickpeas, rinsed
  • 3 Tbsp golden raisins
  • 3 Tbsp pistachios
  • 2 green onions, sliced
  • ¼ cup refrigerated lemon vinaigrette (such as Marzetti)
  • 2 Tbsp chopped fresh flat-leaf parsley (optional)

Instructions

  1. Cook farro according to package directions.
  2. Meanwhile, sprinkle chicken with salt and pepper. Cook chicken in a large skillet coated with cooking spray 6 to 8 minutes or until done.
  3. Combine farro, chicken, carrots, chickpeas, raisins, nuts, and onions in a large bowl. Toss with vinaigrette. Sprinkle with parsley, if desired.
