Horseradish-Garlic Sauce Flank Steak

Ingredients

  • 1 lb flank steak
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 3 Tbsp buttermilk
  • 1½ Tbsp freshly grated Parmesan cheese
  • 1 Tbsp mayonnaise
  • ½ Tbsp prepared horseradish
  • 1 tsp lemon juice
  • 1 small clove garlic, minced
  • 3 Tbsp chopped fresh flat-leaf parsley

Instructions

  1. Preheat broiler. Place steak on a large rimmed baking sheet. Sprinkle with ½ tsp each salt and pepper.
  2. Broil 8 minutes or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  3. Combine buttermilk, cheese, mayonnaise, horseradish, lemon juice, garlic, and ¼ tsp each salt and pepper. Spoon sauce over beef, and sprinkle with parsley.

  • ½ (24-oz) pkg refrigerated mashed sweet potatoes (such as Simply Potatoes)
  • 1 Tbsp butter
  • 1½ Tbsp chopped fresh flat-leaf parsley
  • 1 (12-oz) pkg green beans
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook potatoes according to package directions. Stir in butter; sprinkle with parsley.
  2. Meanwhile, cook green beans according to package directions. Sprinkle with salt and pepper.
