Chicken-and-Spinach Stew

Ingredients

  • 1 large sweet potato, peeled and chopped
  • ¾ cup chopped onion
  • 1 clove garlic, minced
  • ¾ lb boneless, skinless chicken thighs
  • ¼ tsp salt
  • 1 (3-oz) link fully cooked Cajun-style chicken sausage (such as Aidells), cut into ½-inch pieces
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 (14.5-oz) can low-sodium chicken broth
  • 1 (5-oz) pkg baby spinach

Instructions

  1. Place sweet potato, onion, and garlic in a 4-quart slow cooker. Sprinkle chicken with salt.
  2. Place chicken and sausage over vegetables. Add tomatoes and broth.
  3. Cover and cook on LOW 4 hours. Shred chicken with 2 forks; stir in spinach before serving. Season to taste with pepper.
