Chicken-and-Spinach Stew
Ingredients
- 1 large sweet potato, peeled and chopped
- ¾ cup chopped onion
- 1 clove garlic, minced
- ¾ lb boneless, skinless chicken thighs
- ¼ tsp salt
- 1 (3-oz) link fully cooked Cajun-style chicken sausage (such as Aidells), cut into ½-inch pieces
- 1 (14.5-oz) can fire-roasted diced tomatoes
- 1 (14.5-oz) can low-sodium chicken broth
- 1 (5-oz) pkg baby spinach
Instructions
- Place sweet potato, onion, and garlic in a 4-quart slow cooker. Sprinkle chicken with salt.
- Place chicken and sausage over vegetables. Add tomatoes and broth.
- Cover and cook on LOW 4 hours. Shred chicken with 2 forks; stir in spinach before serving. Season to taste with pepper.
