Pumpkin Pancakes

"Sausage" Patties and Seedless Red Grapes

Ingredients

  • 2 cups all-purpose flour
  • 2 Tbsp brown sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 2 tsp pumpkin pie spice
  • 1¾ cups milk
  • ½ cup pumpkin puree
  • 2 large eggs, lightly beaten
  • 2 Tbsp vegetable oil
  • ¼ cup butter, divided
  • 1 (24-oz) bottle pancake syrup

Instructions

  1. Preheat a griddle or large nonstick skillet to medium heat.
  2. Stir together flour, brown sugar, baking powder, salt, and pumpkin pie spice in a large bowl. Add milk, pumpkin, eggs, and oil, stirring until blended.
  3. Melt 1 Tbsp butter on hot griddle; pour about ¼ cup batter for each pancake onto hot skillet. Cook 1 to 2 minutes or until tops are covered with bubbles; turn and cook other side.
  4. Repeat with remaining butter and batter. Serve warm with syrup.

  • 1 (8-oz) pkg frozen veggie sausage patties
  • 1 lb seedless red grapes

Side Dish Instructions

  1. Cook sausage patties according to package directions. Serve patties and grapes with pancakes.
