Chocolate Chunk Pumpkin Cookies

Ingredients
- ½ cup butter, melted
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ⅓ cup pumpkin puree
- ½ tsp salt
- 1 tsp pumpkin pie spice
- ¼ tsp ground cinnamon
- ¾ tsp baking soda
- 1 cup all-purpose flour
- 1 cup semisweet chocolate chunks
Instructions
- Whisk together butter and both sugars. Add egg, vanilla, and pumpkin; whisk until blended.
- Add salt, pumpkin pie spice, cinnamon, baking soda, and flour, stirring until blended. Fold in chocolate chunks. Chill 30 minutes.
- Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Roll dough into 1-inch balls, and arrange 2 inches apart on prepared baking sheets.
- Bake 9 to 10 minutes or until edges are crisp and centers are set but still soft. Cool on baking sheets 5 minutes; transfer to wire racks. Store in airtight containers at room temperature.
