Chocolate Chunk Pumpkin Cookies

Ingredients

  • ½ cup butter, melted
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ⅓ cup pumpkin puree
  • ½ tsp salt
  • 1 tsp pumpkin pie spice
  • ¼ tsp ground cinnamon
  • ¾ tsp baking soda
  • 1 cup all-purpose flour
  • 1 cup semisweet chocolate chunks

Instructions

  1. Whisk together butter and both sugars. Add egg, vanilla, and pumpkin; whisk until blended.
  2. Add salt, pumpkin pie spice, cinnamon, baking soda, and flour, stirring until blended. Fold in chocolate chunks. Chill 30 minutes.
  3. Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Roll dough into 1-inch balls, and arrange 2 inches apart on prepared baking sheets.
  4. Bake 9 to 10 minutes or until edges are crisp and centers are set but still soft. Cool on baking sheets 5 minutes; transfer to wire racks. Store in airtight containers at room temperature.
