Paleo Apple Blondies

Ingredients

  • ½ cup almond butter
  • ¼ cup coconut oil, melted
  • ¾ cup coconut sugar
  • ¼ cup unsweetened applesauce
  • 1 Tbsp vanilla extract
  • ¾ cup almond flour
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp grated nutmeg
  • ½ tsp salt
  • 1 cup finely diced apple

Instructions

  1. Preheat oven to 350°F. Line an 8-inch square baking dish with parchment paper, and coat with cooking spray.
  2. Whisk together almond butter, oil, sugar, applesauce, and vanilla. Stir in both flours, baking soda, cinnamon, nutmeg, and salt. Fold in apple. Spread batter in prepared pan.
  3. Bake 20 to 22 minutes or until golden brown. Cool in pan, and cut into squares. Store, covered, in refrigerator.
