Garlic Pasta with Shrimp and Asparagus
Spicy Spring Mix Salad
Ingredients
- 3 oz whole-grain penne pasta
- ½ lb peeled and deveined, wild-caught large raw shrimp (see Note)
- ¼ lb asparagus, cut into 2-inch pieces
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup grated Parmesan cheese
- 2 Tbsp fat-free milk
- 1 Tbsp light butter with canola oil
- 2 cloves garlic, minced
- 1 green onion, finely chopped
Instructions
- Cook pasta according to package directions, adding shrimp and asparagus during last 3 minutes of cooking; drain.
- Combine pasta mixture with salt, pepper, and remaining ingredients; toss.
Side Dish Ingredients
- 2 tsp canola oil
- 2 tsp balsamic vinegar
- 1½ tsp honey
- ⅛ tsp salt
- Pinch of crushed red pepper
- 2 cups spring mix
- 1 Tbsp chopped fresh basil
Side Dish Instructions
- Whisk together oil, vinegar, honey, salt, and red pepper in a bowl. Add remaining ingredients; toss.
