Garlic Pasta with Shrimp and Asparagus

Ingredients

  • 3 oz whole-grain penne pasta
  • ½ lb peeled and deveined, wild-caught large raw shrimp (see Note)
  • ¼ lb asparagus, cut into 2-inch pieces
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup grated Parmesan cheese
  • 2 Tbsp fat-free milk
  • 1 Tbsp light butter with canola oil
  • 2 cloves garlic, minced
  • 1 green onion, finely chopped

Instructions

  1. Cook pasta according to package directions, adding shrimp and asparagus during last 3 minutes of cooking; drain.
  2. Combine pasta mixture with salt, pepper, and remaining ingredients; toss.

Side Dish Ingredients

  • 2 tsp canola oil
  • 2 tsp balsamic vinegar
  • 1½ tsp honey
  • ⅛ tsp salt
  • Pinch of crushed red pepper
  • 2 cups spring mix
  • 1 Tbsp chopped fresh basil

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, salt, and red pepper in a bowl. Add remaining ingredients; toss.
