Ingredients

  • 8 large eggs
  • ½ tsp garlic salt
  • 2 Tbsp olive oil
  • ½ lb low-sodium deli ham, diced
  • 1 (5-oz) pkg baby spinach
  • ½ cup crumbled goat cheese

Instructions

  1. Whisk together eggs and garlic salt.
  2. Heat 1 Tbsp oil in a large nonstick skillet over medium-heat. Add ham; cook 2 to 3 minutes or until lightly browned.
  3. Stir in spinach; cook 1 to 2 minutes or until wilted.
  4. Add 1 Tbsp oil to pan; reduce heat to medium.
  5. Add eggs to pan. Cook 4 minutes or until eggs are thickened and set, stirring constantly. Top with goat cheese.
