Ingredients
- 8 large eggs
- ½ tsp garlic salt
- 2 Tbsp olive oil
- ½ lb low-sodium deli ham, diced
- 1 (5-oz) pkg baby spinach
- ½ cup crumbled goat cheese
Instructions
- Whisk together eggs and garlic salt.
- Heat 1 Tbsp oil in a large nonstick skillet over medium-heat. Add ham; cook 2 to 3 minutes or until lightly browned.
- Stir in spinach; cook 1 to 2 minutes or until wilted.
- Add 1 Tbsp oil to pan; reduce heat to medium.
- Add eggs to pan. Cook 4 minutes or until eggs are thickened and set, stirring constantly. Top with goat cheese.
