Grape-Pecan Chicken Salad

Ingredients

  • ⅓ cup chopped pecans
  • 3 cups chopped rotisserie chicken
  • ¾ cup olive-oil mayonnaise
  • 1½ tsp curry powder
  • 1 Tbsp sugar
  • ½ tsp salt
  • 1½ cups chopped celery
  • 1½ cups seedless red or green grapes, halved
  • 1 (5-oz) pkg baby arugula

Instructions

  1. Toast pecans in a large, dry skillet over medium-high heat 3 to 4 minutes or until fragrant.
  2. Combine pecans, chicken, mayonnaise, curry, sugar, and salt in a large bowl; stir in celery and grapes. Serve over arugula.
