Grape-Pecan Chicken Salad

Ingredients
- ⅓ cup chopped pecans
- 3 cups chopped rotisserie chicken
- ¾ cup olive-oil mayonnaise
- 1½ tsp curry powder
- 1 Tbsp sugar
- ½ tsp salt
- 1½ cups chopped celery
- 1½ cups seedless red or green grapes, halved
- 1 (5-oz) pkg baby arugula
Instructions
- Toast pecans in a large, dry skillet over medium-high heat 3 to 4 minutes or until fragrant.
- Combine pecans, chicken, mayonnaise, curry, sugar, and salt in a large bowl; stir in celery and grapes. Serve over arugula.
