Ingredients

  • 2 Tbsp butter
  • ½ cup finely chopped onion
  • 2 Tbsp minced garlic
  • 3 to 4 cups chopped cooked chicken (see Note)
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 (4.5-oz) can chopped green chiles, undrained
  • 2½ cups chicken broth
  • 2 (15-oz) cans great Northern beans, drained
  • 1 (8-oz) pkg shredded Monterey Jack cheese, divided (or use shredded mozzarella)
  • ½ cup heavy cream
  • 1 (8-oz) carton sour cream
  • 1 cup salsa
  • Tortilla chips

Instructions

  1. Melt butter in a Dutch oven over medium heat; add onion and garlic. Sauté until tender. Add chicken, oregano, and salt. Sauté 2 to 3 minutes.
  2. Add chiles, broth, and beans. Cover and simmer 10 to 15 minutes. Stir in 1 cup cheese and heavy cream; cook just until thoroughly heated. Garnish with sour cream, salsa, 1 cup cheese, and desired amount of chips.
