Sausage and Shiitake Mushroom Strata

Ingredients

  • ¾ lb ground pork sausage
  • 1 (8-oz) pkg sliced shiitake mushrooms
  • 4 cloves garlic, minced
  • 3 Tbsp olive oil, divided
  • 12 large eggs, lightly beaten
  • ½ tsp kosher salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cook sausage, mushrooms, and garlic in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 8 minutes or until sausage is done. Remove from heat, and cool slightly.
  2. Whisk together eggs, salt, and pepper in a large bowl; stir in sausage mixture. Transfer to a 13- x 9-inch baking dish rubbed with 1 Tbsp oil.
  3. Bake 25 minutes or until center is set.

  • 3 Tbsp olive oil
  • 3 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 (5-oz) pkg baby spinach

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, salt, and pepper in a large bowl; add spinach, and toss.
