Sausage and Shiitake Mushroom Strata
Spinach-Dijon SaladIngredients
- ¾ lb ground pork sausage
- 1 (8-oz) pkg sliced shiitake mushrooms
- 4 cloves garlic, minced
- 3 Tbsp olive oil, divided
- 12 large eggs, lightly beaten
- ½ tsp kosher salt
- ½ tsp pepper
Instructions
- Preheat oven to 400°F. Cook sausage, mushrooms, and garlic in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 8 minutes or until sausage is done. Remove from heat, and cool slightly.
- Whisk together eggs, salt, and pepper in a large bowl; stir in sausage mixture. Transfer to a 13- x 9-inch baking dish rubbed with 1 Tbsp oil.
- Bake 25 minutes or until center is set.

- 3 Tbsp olive oil
- 3 Tbsp apple cider vinegar
- 1 Tbsp Dijon mustard
- ½ tsp salt
- ¼ tsp pepper
- 2 (5-oz) pkg baby spinach
Side Dish Instructions
- Whisk together oil, vinegar, mustard, salt, and pepper in a large bowl; add spinach, and toss.
