Caribbean Cod
Garlic-Herb Spinach
Ingredients
- 2 Tbsp Jerk seasoning
- 4 (6-oz) cod fillets, thawed and patted dry
- ½ tsp kosher salt, divided
- 1 Tbsp olive oil
- ¼ cup butter, softened
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F. Rub seasoning all over fish; sprinkle with ¼ tsp salt. Place on a baking sheet rubbed with oil.
- Bake 15 to 18 minutes or until fish flakes with a fork.
- Stir together butter, cilantro, and ¼ tsp salt in a small bowl; spoon over warm fish.

- 2 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
- 2 Tbsp olive oil
- 1 (5.2-oz) pkg creamy garlic-herb spreadable cheese
Side Dish Instructions
- Cook spinach in hot oil in a large skillet over medium heat 2 minutes or until thoroughly heated, stirring often. Stir in cheese until melted.
