Tuna and White Bean Pasta Salad

Ingredients

  • ½ (12-oz) pkg gluten-free penne pasta
  • ¼ cup olive-oil mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp lemon juice
  • 1 (12-oz) can chunk light tuna in water, drained
  • ¾ cup cannellini beans, drained and rinsed
  • 1 stalk celery, chopped

Instructions

  1. Cook pasta according to package directions; drain and rinse with cold water.
  2. Whisk together mayonnaise, sour cream, parsley, and lemon juice.
  3. Add tuna, beans, and celery to pasta.
  4. Pour dressing over pasta, and toss; season with salt and pepper to taste. Chill until ready to serve.

Side Dish Ingredients

  • 1 (5-oz) pkg baby arugula
  • 1 sweet apple, chopped
  • 1 Tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey

Side Dish Instructions

  1. Combine arugula and apple in a bowl.
  2. Whisk together oil, vinegar, mustard, honey, and salt and pepper to taste; pour dressing over salad, and toss.
