Tuna and White Bean Pasta Salad
Apple-Arugula Salad
Ingredients
- ½ (12-oz) pkg gluten-free penne pasta
- ¼ cup olive-oil mayonnaise
- ¼ cup sour cream
- 2 Tbsp chopped fresh parsley
- 1 Tbsp lemon juice
- 1 (12-oz) can chunk light tuna in water, drained
- ¾ cup cannellini beans, drained and rinsed
- 1 stalk celery, chopped
Instructions
- Cook pasta according to package directions; drain and rinse with cold water.
- Whisk together mayonnaise, sour cream, parsley, and lemon juice.
- Add tuna, beans, and celery to pasta.
- Pour dressing over pasta, and toss; season with salt and pepper to taste. Chill until ready to serve.
Side Dish Ingredients
- 1 (5-oz) pkg baby arugula
- 1 sweet apple, chopped
- 1 Tbsp olive oil
- 1 tsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
Side Dish Instructions
- Combine arugula and apple in a bowl.
- Whisk together oil, vinegar, mustard, honey, and salt and pepper to taste; pour dressing over salad, and toss.
