Pesto-Ranch Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ⅓ cup pesto
  • ½ (1-oz) envelope Ranch dressing mix
  • ½ cup chicken broth

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season chicken lightly with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until browned.
  3. Stir in pesto, dressing mix, and broth; bring to a boil, reduce heat, and simmer until sauce is thickened and chicken is done.

Side Dish Ingredients

  • ¾ cup long-grain white rice
  • ½ (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook green beans according to package directions; season with salt and pepper to taste.
