Pesto-Ranch Chicken
Steamed Rice and Green Beans
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- ⅓ cup pesto
- ½ (1-oz) envelope Ranch dressing mix
- ½ cup chicken broth
Instructions
- Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season chicken lightly with salt and pepper.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until browned.
- Stir in pesto, dressing mix, and broth; bring to a boil, reduce heat, and simmer until sauce is thickened and chicken is done.

- ¾ cup long-grain white rice
- ½ (16-oz) pkg frozen green beans
Side Dish Instructions
- Cook rice according to package directions.
- Cook green beans according to package directions; season with salt and pepper to taste.
