Loaded Vegetable Pasta Bake

Ingredients

  • ½ (16-oz) pkg ziti pasta
  • 2 Tbsp butter
  • ½ (8-oz) pkg whole mushrooms, sliced
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 2 Tbsp all-purpose flour
  • 2 cups chicken broth
  • 1½ cups shredded mozzarella cheese
  • ½ Tbsp Dijon mustard
  • ½ (10-oz) pkg spinach
  • ½ (12-oz) pkg frozen broccoli and cauliflower, thawed
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium heat; add mushrooms, onion, and garlic. Cook, stirring often, 8 minutes or until tender. Stir in flour, and cook, stirring, 2 minutes.
  3. Gradually stir in broth; bring to a boil, reduce heat, and simmer 10 minutes or until slightly thickened. Stir in mozzarella, mustard, and salt and pepper to taste.
  4. Gradually stir in spinach until wilted. Add broccoli, cauliflower, and pasta. Spoon into a lightly greased 11- x 7-inch baking dish. Bake 20 minutes or until hot and bubbly. Sprinkle with Parmesan.
