Sheet Pan Pork Chops with Asparagus and Sweet Potatoes

Ingredients
- 6 Tbsp olive oil, divided
- 3 Tbsp lemon juice
- 4 tsp smoked paprika (or use regular)
- 1 tsp dried thyme
- 4 cloves garlic, minced
- 6 (6-oz) boneless pork chops
- 1½ lb sweet potatoes, peeled and cut into chunks
- ¾ tsp salt
- ¾ tsp pepper
- 1 lb asparagus, trimmed
Instructions
- Preheat oven to 475°F. Combine 3 Tbsp oil, lemon juice, paprika, thyme, and garlic.
- Combine pork and oil mixture. Place on a large rimmed baking sheet.
- Toss potatoes with 3 Tbsp oil; arrange around pork. Season pork and potatoes with salt and pepper.
- Bake 15 minutes; add asparagus to pan, and bake 10 minutes longer or until pork is done and vegetables are tender, turning pork once during baking.
