Spaghetti Squash with Meat Sauce

Ingredients

  • 1 (1-lb) spaghetti squash, halved and seeded
  • ⅓ cup chopped onion
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • ½ lb lean ground beef
  • ⅛ tsp cayenne pepper
  • ⅛ tsp dried oregano
  • ⅛ tsp salt
  • ¾ cup natural marinara sauce (such as Rao's)
  • ¼ cup freshly shredded Parmesan cheese

Instructions

  1. Preheat oven to 400°F.  Place squash, cut sides down, on a foil-lined rimmed baking sheet coated with cooking spray.
  2. Bake 30 minutes or until tender.
  3. Meanwhile, sauté onion and garlic in hot oil 2 minutes in a large nonstick skillet over medium-high heat. Add beef, pepper, oregano, and salt; cook 6 minutes or until beef is browned, stirring to crumble.
  4. Stir in marinara sauce; bring to a boil, and cook 3 to 4 minutes.
  5. Use a fork to remove spaghetti-like strands from squash. Divide squash between 2 plates, and top with meat sauce. Sprinkle with cheese.

  • 2 cups torn Bibb lettuce
  • 3 Tbsp chopped red onion
  • 2 tsp olive oil
  • 2 tsp apple cider vinegar
  • ⅛ tsp salt

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
