Spaghetti Squash with Meat Sauce
Bibb Lettuce SaladIngredients
- 1 (1-lb) spaghetti squash, halved and seeded
- ⅓ cup chopped onion
- 1 clove garlic, minced
- 1 tsp olive oil
- ½ lb lean ground beef
- ⅛ tsp cayenne pepper
- ⅛ tsp dried oregano
- ⅛ tsp salt
- ¾ cup natural marinara sauce (such as Rao's)
- ¼ cup freshly shredded Parmesan cheese
Instructions
- Preheat oven to 400°F. Place squash, cut sides down, on a foil-lined rimmed baking sheet coated with cooking spray.
- Bake 30 minutes or until tender.
- Meanwhile, sauté onion and garlic in hot oil 2 minutes in a large nonstick skillet over medium-high heat. Add beef, pepper, oregano, and salt; cook 6 minutes or until beef is browned, stirring to crumble.
- Stir in marinara sauce; bring to a boil, and cook 3 to 4 minutes.
- Use a fork to remove spaghetti-like strands from squash. Divide squash between 2 plates, and top with meat sauce. Sprinkle with cheese.

- 3 Tbsp chopped red onion
- 2 tsp olive oil
- 2 tsp apple cider vinegar
- ⅛ tsp salt

- Toss together all ingredients in a bowl.
