Smoky-Sweet Shredded Pork Wraps
Celery, Walnut, and Pear Salad
Ingredients
- ⅔ cup diced onion
- ¾ lb boneless pork loin chops, trimmed
- 1 Tbsp vegetable oil
- ¾ tsp ground cumin
- ¾ tsp smoked paprika (or use regular)
- ¼ tsp ground cinnamon
- ½ cup barbecue sauce
- 1½ tsp balsamic vinegar
- 1½ tsp Dijon mustard
- ¾ tsp Worcestershire sauce
- ½ head Bibb or red leaf lettuce, separated into leaves
Instructions
- Place onion in a 3- or 4-quart slow cooker coated with cooking spray; arrange pork on onion, overlapping slightly. Drizzle oil over pork; sprinkle with cumin, paprika, and cinnamon.
- Cover and cook on LOW 8 hours.
- Shred pork using 2 forks.
- Stir together barbecue sauce, vinegar, mustard, and Worcestershire sauce in a bowl; add to pork in cooker, stirring well.
- Cover and cook on HIGH 30 minutes.
- Spoon pork mixture onto lettuce leaves; roll up.

- 2 cups thinly sliced celery
- ⅓ cup chopped walnuts, toasted
- ½ small pear, thinly sliced
- 1½ tsp olive oil
- 1½ tsp lemon juice
Side Dish Instructions
- Toss together all ingredients in a bowl.
