Maple-Bacon Pork Chops
Roasted Fingerling Potatoes and Brussels Sprouts
Ingredients
- 2 slices center cut bacon, chopped
- ¼ cup diced onion
- 2 small cloves garlic, minced
- ½ cup apple juice
- 3 Tbsp maple syrup
- ¼ tsp dried thyme
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 (6-oz) boneless pork chops
- 1 tsp olive oil
Instructions
- Cook bacon in a small skillet over medium-high heat 6 to 8 minutes or until crisp. Drain, reserving drippings in skillet.
- Add onion and garlic to drippings; cook 4 to 5 minutes or until onion is tender. Add juice, syrup, thyme, salt, and pepper; cook 4 to 5 minutes or until thick and syrupy. Stir in bacon.
- Meanwhile, cook pork in hot oil in another skillet over medium-high heat 3 minutes per side or until done. Serve pork with sauce.

- 1 cup halved fingerling potatoes
- 1 Tbsp olive oil
- 1 Tbsp minced garlic
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Combine Brussels sprouts, potatoes, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until browned and tender, stirring once.
