Maple-Bacon Pork Chops

Ingredients

  • 2 slices center cut bacon, chopped
  • ¼ cup diced onion
  • 2 small cloves garlic, minced
  • ½ cup apple juice
  • 3 Tbsp maple syrup
  • ¼ tsp dried thyme
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 (6-oz) boneless pork chops
  • 1 tsp olive oil

Instructions

  1. Cook bacon in a small skillet over medium-high heat 6 to 8 minutes or until crisp. Drain, reserving drippings in skillet.
  2. Add onion and garlic to drippings; cook 4 to 5 minutes or until onion is tender. Add juice, syrup, thyme, salt, and pepper; cook 4 to 5 minutes or until thick and syrupy. Stir in bacon.
  3. Meanwhile, cook pork in hot oil in another skillet over medium-high heat 3 minutes per side or until done. Serve pork with sauce.

  • 2 cups halved Brussels sprouts
  • 1 cup halved fingerling potatoes
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Combine Brussels sprouts, potatoes, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until browned and tender, stirring once.
