Cajun Chicken and Sausage Soup

Ingredients
- 1 lb boneless, skinless chicken thighs, cubed
- ⅛ tsp salt
- ½ tsp pepper
- 1 Tbsp olive oil
- 1 (32-oz) carton organic chicken broth
- 1 (12-oz) pkg nitrite-free Cajun-style andouille sausage, cut into 2-inch pieces
- 1 (16-oz) pkg mixed vegetables
- 1 (14-oz) can diced tomatoes with basil, garlic, and oregano, undrained
- 2 Tbsp tomato paste
- 1 to 2 tsp Cajun seasoning
- 1 bay leaf
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a Dutch oven 3 to 4 minutes or until browned all over, stirring once. Stir in broth, scraping pan to loosen browned bits.
- Add sausage, mixed vegetables, tomatoes, tomato paste, Cajun seasoning, and bay leaf.
- Bring soup to a boil; reduce heat, and simmer for at least 15 minutes. Remove bay leaf before serving.
