Indian-Spiced Beef Short Ribs

Ingredients

  • 1½ lb boneless beef short ribs
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ Tbsp garam masala
  • 2 Tbsp coconut oil (or use avocado oil)
  • 2 carrots, sliced
  • 1 onion, cut into wedges
  • 2 cloves garlic, smashed
  • ¾ tsp ground ginger
  • 2 cups organic beef broth

Instructions

  1. Sprinkle ribs with salt and pepper; rub with garam masala. Melt oil in a large skillet over medium-high heat; add ribs, and cook 2 to 3 minutes per side or until browned. Transfer to a 4- or 5-quart slow cooker.
  2. Sauté carrots, onion, garlic, and ginger in skillet 3 minutes or until beginning to brown. Add 1 cup broth, scraping skillet to loosen browned bits; pour over ribs in cooker. Add 1 cup broth.
  3. Cover and cook on LOW 7 hours or until meat is tender.

Side Dish Ingredients

  • 1 lb sweet potatoes, peeled and coarsely chopped
  • 2 to 3 Tbsp unsweetened coconut milk (or use organic beef or chicken broth)
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Combine potatoes and water to cover in a large saucepan. Bring to a boil over medium-high heat; reduce heat, and simmer 10 minutes or until tender. Drain and return to pan.
  2. Add coconut milk, salt, and pepper; mash to desired consistency.
