Oven-Roasted Sausage, Corn, and Potatoes
Green Onion RiceIngredients
- 1½ lb small red potatoes, halved
- 1 onion, cut into wedges
- 3 Tbsp olive oil, divided
- 1 (13-oz) pkg smoked sausage link, cut into ½-inch pieces
- 1 (15-oz) pkg frozen yellow corn kernels
- 1 pint grape tomatoes
- 1 Tbsp Creole seasoning
Instructions
- Preheat oven to 425°F. Toss together potatoes, onion, and 2 Tbsp oil on a lightly greased rimmed baking sheet. Bake 20 minutes.
- Toss together sausage, corn, tomatoes, and 1 Tbsp oil; add to baking sheet, and sprinkle with Creole seasoning. Bake 15 minutes longer or until potatoes are tender and sausage is browned.
Side Dish Ingredients
- 2 cups long-grain white rice
- 3 green onions, chopped
Side Dish Instructions
- Cook rice according to package directions; stir in onions, and season with salt and pepper to taste.
