Oven-Roasted Sausage, Corn, and Potatoes

Ingredients

  • 1½ lb small red potatoes, halved
  • 1 onion, cut into wedges
  • 3 Tbsp olive oil, divided
  • 1 (13-oz) pkg smoked sausage link, cut into ½-inch pieces
  • 1 (15-oz) pkg frozen yellow corn kernels
  • 1 pint grape tomatoes
  • 1 Tbsp Creole seasoning

Instructions

  1. Preheat oven to 425°F. Toss together potatoes, onion, and 2 Tbsp oil on a lightly greased rimmed baking sheet. Bake 20 minutes.
  2. Toss together sausage, corn, tomatoes, and 1 Tbsp oil; add to baking sheet, and sprinkle with Creole seasoning. Bake 15 minutes longer or until potatoes are tender and sausage is browned.

Side Dish Ingredients

  • 2 cups long-grain white rice
  • 3 green onions, chopped

Side Dish Instructions

  1. Cook rice according to package directions; stir in onions, and season with salt and pepper to taste.
