Smoked Sausage-Tortellini Skillet
Spicy Roasted BroccoliniIngredients
- 1 (14-oz) pkg smoked sausage link, sliced
- 1 onion, chopped
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
- 1 (14.5-oz) can petite diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 (20-oz) pkg refrigerated cheese tortellini
- 1 (10-oz) pkg spinach
Instructions
- Cook sausage, onion, and garlic in hot oil in a large deep skillet over medium heat until sausage is browned.
- Add tomatoes, broth, and cream to skillet; bring to a boil.
- Stir in tortellini; reduce heat, cover and simmer 5 minutes or until tortellini is tender. Uncover and gradually stir in spinach until wilted. Season with salt and pepper to taste.

- 2 bunches broccolini, trimmed
- 2 Tbsp olive oil
- 1 Tbsp minced garlic
- ½ tsp crushed red pepper
Side Dish Instructions
- Preheat oven to 425°F. Combine broccolini, oil, garlic, and red pepper on a rimmed baking sheet. Bake 8 minutes or until tender. Season to taste.
