Crispy Beef Taquitos

Mixed Greens Salad with Crunchy Tortilla Strips

Ingredients

  • 1½ lb ground beef
  • 1 onion, chopped
  • 1 (1-oz) envelope taco seasoning mix
  • ¼ cup water
  • 1 (20-oz) pkg burrito-size flour tortillas
  • 1 (16-oz) container guacamole
  • 1 (8-oz) pkg shredded colby-Jack cheese
  • 2 Tbsp olive oil
  • 1 (8-oz) carton sour cream

Instructions

  1. Preheat oven to 450°F. Cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Add taco seasoning and water; cook over medium heat until very thick.
  2. Spread guacamole down centers of tortillas; sprinkle with beef mixture and cheese. Roll up and place, seam side down, on a lightly greased rimmed baking sheet; brush with oil.
  3. Bake 15 minutes or until crisp. Serve with sour cream for dipping.

Side Dish Ingredients

  • ½ cup Ranch dressing
  • ½ tsp chili powder
  • ½ tsp pepper
  • 1 head romaine lettuce, chopped (or use other salad greens)
  • 2 tomatoes, chopped
  • 1 (3.5-oz) pkg tricolor tortilla strips

Side Dish Instructions

  1. Stir together dressing, chili powder, and pepper in a large bowl.
  2. Add lettuce, tomatoes, and tortilla strips just before serving; toss.
