Crispy Beef Taquitos
Mixed Greens Salad with Crunchy Tortilla StripsIngredients
- 1½ lb ground beef
- 1 onion, chopped
- 1 (1-oz) envelope taco seasoning mix
- ¼ cup water
- 1 (20-oz) pkg burrito-size flour tortillas
- 1 (16-oz) container guacamole
- 1 (8-oz) pkg shredded colby-Jack cheese
- 2 Tbsp olive oil
- 1 (8-oz) carton sour cream
Instructions
- Preheat oven to 450°F. Cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Add taco seasoning and water; cook over medium heat until very thick.
- Spread guacamole down centers of tortillas; sprinkle with beef mixture and cheese. Roll up and place, seam side down, on a lightly greased rimmed baking sheet; brush with oil.
- Bake 15 minutes or until crisp. Serve with sour cream for dipping.

- ½ cup Ranch dressing
- ½ tsp chili powder
- ½ tsp pepper
- 1 head romaine lettuce, chopped (or use other salad greens)
- 2 tomatoes, chopped
- 1 (3.5-oz) pkg tricolor tortilla strips
Side Dish Instructions
- Stir together dressing, chili powder, and pepper in a large bowl.
- Add lettuce, tomatoes, and tortilla strips just before serving; toss.
