Sheet Pan Salmon, Potatoes, and Broccoli

Ingredients

  • 1 head broccoli, cut into florets
  • 1½ lb Yukon Gold potatoes, thinly sliced
  • 1 red onion, cut into wedges
  • 5 Tbsp olive oil, divided
  • 6 (6-oz) frozen salmon fillets, thawed
  • 1 cup mayonnaise
  • 3 Tbsp fresh lemon juice
  • 1 Tbsp chopped fresh rosemary

Instructions

  1. Preheat oven to 450°F. Toss together broccoli, potatoes, onion, and 4 Tbsp oil on a large rimmed baking sheet. Spread in a single layer, and season lightly with salt and pepper.
  2. Bake 15 minutes. Carefully arrange fish over vegetables on baking sheet; brush with 1 Tbsp oil, and season lightly with salt and pepper. Bake 8 to 10 minutes or until fish flakes with a fork.
  3. Stir together mayonnaise, lemon juice, and rosemary. Serve with fish and vegetables.
