Balsamic-Mustard-Glazed Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut in half lengthwise
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp grainy Dijon mustard
  • 1 Tbsp honey
  • 1 tsp dried thyme
  • 2 Tbsp olive oil

Instructions

  1. Sprinkle chicken with salt and pepper.
  2. Whisk together vinegar, mustard, honey, and thyme.
  3. Cook chicken in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done, basting with vinegar mixture every few minutes.

  • 2 lb carrots, cut into ½-inch pieces
  • 2 red onions, thinly sliced
  • 3 Tbsp olive oil
  • 1 tsp garlic salt
  • 1 tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until tender and golden brown, stirring occasionally.
